Maitake mushroom (Grifola frondosa), also known as the "Hen of the Woods," is an edible fungi that grows naturally at the base of oak, elm, and maple trees across Japan, China, Europe, and North America. Our dried Maitake mushrooms are processed using a specialized industrial method known as superfine grinding. This transforms the mushrooms into a near-dust consistency, significantly enhancing their quality.

This advanced milling technique is crucial because it breaks down chitin—the tough, fibrous material that makes up mushroom cell walls (the same substance found in the exoskeletons of arthropods). Without breaking the chitin molecule, many of the mushroom's beneficial compounds remain "locked" inside the cells and simply pass through the digestive system unabsorbed. While chitin can be partially broken down through cooking, boiling, or freezing, these traditional methods only unlock a tiny fraction of the nutrients. To get a supplemental dose through food alone, one would have to consume an impossible amount of mushrooms.

To further maximize efficacy, our Maitake powder is vacuum-dried while being continuously stirred. This additional step further disrupts the cell walls, significantly increasing the bioavailability of the intracellular nutrients for optimal absorption.

 Key Bioactive Compounds of Maitake

  • Polysaccharides: Over the last 30 years, more than 47 bioactive polysaccharide fractions have been isolated and purified from the fruiting bodies, mycelium, and culture media of G. frondosa using various extraction methods. The primary polysaccharides found in Maitake are beta-glucans and D-glucans (also known as alpha-glucans). Among these, the D-fraction and MD-fraction are considered the most significant for their health-promoting properties.
  • Proteins and Peptides: Several types of bioactive proteins and peptides have been identified in G. frondosa, including a specific lectin called N-acetyl galactosamine (GalNAc), commonly known as Maitake D-lectin (MDL). These mushrooms also contain ribonucleases, polysaccharide-peptides (PSP), polysaccharide-K (PSK), ergothioneine, and various enzymes.

The History of Maitake

Maitake mushrooms were first discovered over 2,000 years ago by Buddhist monks in Japan. In fact, Japan was one of the pioneering nations in the mid-1980s that began cultivating G. frondosa artificially.

Maitake is a significant part of Japanese culture, often depicted in art, literature, and even video games. In Japanese mythology, the mushroom is believed to possess magical properties and is frequently associated with luck, longevity, and prosperity.

Today, Maitake is also cultivated commercially in the United States, particularly in the Northeast. Some American farmers grow the mushroom traditionally on hardwood logs, while others use advanced substrates like sawdust.

During Japan's Shogun era, this fungus was so highly valued that its weight was traded for an equal weight in silver. A typical Maitake specimen averages around 4.5 kg (10 lbs), but in some areas, it can grow substantially larger, weighing more than 22 kg (over 48 lbs)!
